I was doing some research the other day and I came across something very fascinating - completely uncanny. Here's a little known fact. The official groundbreaking for the construction of the Pentagon was on September 11, 1941. This was exactly 60 years to the day of the tragedys of September 11th, 2001 happened. Coincidental?

Rain, rain...go away....come back when we need it. I've decided to get into better shape by getting back into a exersize regiment - specifically biking. I am trying to bike every other day - a 2 hour bike ride each time. There are some fantastic bike trails here in the area - most noteably the W O&D train trail. But the weather has not been cooperative to my regiment. I may go for a 4 hour bike ride over the weekend if the weather permits.

Aarrrg, the rain...the RAIN. It's nice...it's quenching yet annoying. Woke up tired.....wanted to sleep...couldn't sleep in - it was rainy sleepy weather. Drove in it. I need new windshield wipers - I have that "windshield wiper fart" sound thing happening. Rain causes accidents in traffic (well, arguably - a cumulation of bad drivers who drive stupidly in traffic in the rain cause accidents). But hey!...It's Spring. Gotta be positive. The rain washed off the bird crap clustered on my car from all the happy little Robins after a morning consuming and digesting worms. Life in the food chain.

This past weekend, I went to this huge asian market - almost the size of a Costo or Sam's Club.....warehouse sized market of every imaginable middle eastern culinary soup to nuts. I only stopped by for a few small items - and fortunately I had enough will to steer away from the sirens with toothpics holding up my eyelids (The Odyssey by Homer reference). Oh the singsong of the siren tempting me...

Anyhoo. I was really impressed by the baby bok choy. I had to get a fresh batch - unsure what I wanted to cook with it...but I had an idea. I also had some catfish filets.....So without adu, I present:

"Lemon Dill Catfish with Herbed Baby Bok Choy and Spinach "

3 medium catfish filets, boned, filet style
3 tbsps lemon juice
teaspoon of dill weed
corse/kosher salt to taste
fresh ground pepper to taste

Preheat oven to 350 degrees. In a medium casserole dish, wipe with oil to prevent sticking. Simply lay down filets in dish, drizzle lemon juice over filets, sprinkle dill weed, salt and pepper. Lightly cover in tin foil and place in oven for 15 minutes or until moist and flakey. While in oven, prepare the bok choy and spinach:

1lb baby bok choy
1lb fresh spinach (leaves only)
1/2 cup finely chopped italian parsley or cilantro
1/2 cup dry Chardonnay
1tbsp light olive oil
4 large cloves of garlic chopped corsely
2 medium scallions thinly chopped
corse/kosher salt to taste
fresh ground pepper to taste

First, in a large pan or wok - saute the garlic and scallions in olive oil for a few minutes on high heat. Toss in baby bok choy stirring every now and then to induce garlic and scallions. Add salt and pepper and cilantro. Keep stirring until bok choy leaves begin to wilt. Toss in spinach - stir in completely, while adding Chardonnay. Stir for about 3 - 5 minutes or until spinach is soft and stems of the bok choy are slightly transparent and caramelized. Plate with Catfish and serve. Bon apetit.

Went on a long ass bike ride tonight. Well...not too long, but long for about 2 hours after a long day at the office. Twas a little chilly..i was slightly underdressed - sweatshirt, mtb shorts, gloves, helmut. The wind was gusty on the return trip but it felt good against my burning legs. The air was crisp and the sun was setting. Everything looked beautiful, even the broken down shacks on the side of the bike trail. That certain time of a sunset where the sides of buildings glow mysterious colors, and shadows turn purple against fire red-orange trees. The sky is that untellable facile color...unsure it's pink, green, orange or purple....it changes in a wink.
